QUINOA SALAD



I eat this almost everyday and it has replaced white rice for almost a year now. I have not gained a pound even lost excess weight. It's packed with protein, iron, lysine, magnesium and manganese. So yummy to the tummy, and a very energizing meal!

QUINOA SALAD

INGREDIENTS:
1.5 cups quinoa
1 cucumber chopped
1 tomato (take out seeds) chopped
1/2 red onion minced
2 tsp cilantro chopped
1 green bellpepper chopped
1/2 carrot chopped
1 lemon squeezed
3-4 tbsp extra virgin olive oil
1 tsp salt
pepper

- Cook quinoa as you would cook rice (quinoa requires LESS water) Let it cool down
- Mix the rest of the ingredients in a salad bowl
- Add quinoa to the mix
